Splendid Chicken Skewers


Woo! First post! An epic adventure has begun. Who knew med students had time to cook? If you knew me last year or any time before that you would've thought that I was crazy to spend time cooking instead of studying. For instance, I should be reading right now...Let's say I've changed for the better. But really, I have no idea what to write as an introduction. I think Ladan is taking care of that.

Anyway, tonight I made chicken skewers using the grill that I am obsessed with. My awesome roommate, Quy, and I bought a grill at the beginning of the school year, and it was probably one of the best purchases I have made food-wise. Since my philosophy of cooking is to never measure (hence I don't bake), I'll just describe how I made it.

I made a marinade out of Thai sweet chili sauce (I'll update a picture later), soy sauce, olive oil, cayenne pepper, and about 5 cloves of garlic. I cut the chicken into cubes and marinated them overnight, covered in the fridge. This afternoon I soaked bamboo skewers in water for about 30 minutes before skewering the marinated chicken cubes and pieces of yellow onion, alternating them on the skewers. I grilled the skewers (I got 6 skewers out of 3 chicken breasts) for about 4 minutes on each side, turning once (2 sides total - I was too lazy to turn more and it was really unnecessary). I served the skewers with brown rice and steamed broccoli.

3 cheers for the grill. Many more grilling adventures to come. Ladan has tried rib-eye steak and salmon that I made on the grill last week. Too bad I don't have any pictures :(

Ok my Safari just froze. I just want to say that after updating to Snow Leopard, everything has been working slower. WTF, Apple? Don't make me hate you....because you will get fat.
